Abstract: Pumpkin (Cucurbita spp.) is an annual plant belonging to the Cucurbitaceae family, which is mostly produced in Asia. The cultivation of pumpkin has been increasing in our country in recent years and it is thought that it can be produced as a source of cooking oil as well as being used as a snack to evaluate the by-products of the pumpkin and to consume the valuable ingredients in its seeds. In this compilation study, information was given about the components of the oils obtained from pumpkin plants, seeds and pumpkin seeds and their effect on human health.
