| Description: | The changes of the protein nitrogen composition were studied in four different protein substrates under pancreatic hydrolysis. Changes in the levels of total and amine nitrogen, residual protein, high-, medium, and low-molecular-weight peptides, tryptophan and tyrosine were demonstrated. The concept of pancreatic hydrolysis of complex protein substrates as a process of maceration, extraction and hydrolysis was suggested. |
