Description: | Smoking smoke, fish, furan compounds, phenols, quality, wood The paper presents the results of studies of samples of smoke smoke obtained from different types of fruit wood for the content of components that ensure high quality and safety of finished products. The content of the main compounds was established, which provided a smoking effect depending on the type of wood. It has been established that in the smoke from cherry wood and plum, the specific content of phenolic components is higher than in other samples, and the smoke obtained from alder and apple is the leader in the number of furan compounds. |
